Emirates is now serving Dom Pérignon Vintage 2005 and Dom Pérignon Vintage Rosé 2003 in First Class to complement the six pairing menus it has recently created. The Champagne pairing menus are available across various routes including all services to and from the UK.
Together with Emirates’ team of culinary experts, the menus have been created in collaboration with Pascal Tingaud, chef de cuisine at Dom Pérignon, who is a two-Michelin star chef. Because of the limited production due to the challenging nature of the 2005 harvest, the vintage availability will be carefully administered.
On flights from Dubai, First Class customers can sample canapés of; cured duck with saffron-poached peach, walnut baguette with Persian feta cheese, fresh fig, and truffle-infused honey; and wild smoked salmon, lemon and cumin cream cheese on Norlander bread. Customers on these flights can also enjoy a menu featuring charcoal cracker topped with ash goat’s cheese and quince jelly, teriyaki-marinated duck breast with a curried apricot and apple chutney, as well as some mixed sesame coated tuna with wasabi mayonnaise.
Emirates assure that only the finest produce have been used to develop an innovative gastronomic experience that utilises unusual food combinations to heighten the flavour of the champagne and provide an inimitable dining experience to First Class passengers. The Dom Pérignon Vintage 2005 has been described as rather spicy with a flowery finish that pairs fabulously with food, while the Dom Pérignon Vintage Rosé flavours are intense and unique, likened to those of the legendary 1947, 1959 and 1976 productions.
